These are not in a Barefoot Contessa cookbook, but they would be if Ina Garten ever lived in the Upper Midwest, where bars reign supreme.
I use vegetable shortening instead of butter, and I don’t monkey around with the foil in the pan. I just spray a 9×13 pan with vegetable oil spray, and remove them when they’re cool.
Since this recipe uses less than a whole can of pumpkin, I stir the remaining pumpkin into pancake batter for pumpkin pancakes. That counts as a vegetable for picky toddlers, by the way.
You may want to buy an extra bag of chocolate chips, too. The extra bag is not for the bars, but for that blustery winter day when you don’t want to leave the house, but you’re completely out of chocolate, and you’ve already raided your kids’ Halloween candy, and your husband never thinks to look behind the baking powder in the baking cabinet… you’ve just created your very own secret stash.
