Is there anything that smells better than bread in the oven? I didn’t think so. I’ve been using a whole grain all-purpose flour which has worked nicely in everything I’ve made so far (cakes, muffins, and now this bread).

What kind of flour are you using?
Mary, it’s a whole grain “white” all purpose flour that I bought at Costco. It’s unbleached, but otherwise is no different in looks or flavor from other all purpose flour, and I think it has 9g of whole grains per serving. I have no idea if that’s good or not, but it’s better than just plain white flour. I use whole wheat flour in some things, too, but this is good for things where whole wheat flour just will not do (or for mixing with whole wheat flour).
Now if anything doesn’t turn out, You Know Who claims it was the flour that I used. Muffins burned? “I think it was that whole grain flour.” No, dear, it was the VERY HOT OVEN.
