Seared Tuna with Mango Chutney

I took (extreme) liberties with this recipe by using salmon instead of tuna, in the name of using what we have on hand, and being afraid to cook rare fish at home.  (There’s not a lot of logic behind this fear, as I love sushi.)  I followed the chutney recipe exactly, though, and it was just as delicious with some roasted salmon as I imagine it would have been with the tuna.  It would also pair nicely with some grilled chicken breasts or other fish.
