Cauliflower Gratin

Cauliflower is certainly not our favorite vegetable around here, but we’ve found some ways to make it tolerable.  This recipe (Barefoot in Paris) was the first thing that I cooked upon coming home from watching Julie & Julia.   It’s so similar to the recipe in Julia Child’s  Mastering the Art of French Cooking that I felt inspired to make it.  Our beloved Contessa, of course, has directions that are infinitely more readable and understandable than The French Chef, using the same ingredients.  I still strongly prefer parmesan-roasted cauliflower, but this would be something that could be assembled, for the most part, in advance and simply heated in the oven for dinner guests.
