Ina claims in “How Easy is That?” that this dessert is a favorite at English boarding schools, so I decided to make it in honor of the start of the Olympics in London tomorrow. I have to say, the English boarding schools have a thing or two to teach American schools, where you might get a soft serve ice cream dispenser in the corner of the cafeteria if you’re lucky. We used fresh raspberries, but I don’t think there would be anything wrong if you wanted to use frozen raspberries, say for Valentine’s Day.
