This is such a quintessential summer meal. The temperatures have been so steamy and hot here, but tonight a breeze picked up, and we fired up the grill while the kids played outside. The marinade for the tequila lime chicken (Barefoot Contessa Family Style) used up some of the tequila that we bought for the margaritas. They might not be pretty, but they were tasty! I used boneless, skinless chicken thighs instead of chicken breasts. They cooked quickly and didn’t dry out at all. We use a charcoal grill, so the flavor was really fantastic.
The perfect side dish for this was this guacamole salad (Barefoot Contessa at Home). I used a little extra cayenne and some cumin instead of the jalapeño, and omitted the raw onion. I’ve made a version of this kind of salad for years, and sometimes I toss the same ingredients with lettuce, salsa, and sour cream. Some people like to add a little seasoned ground beef or chicken, and even throw in some tortilla chips. I’ve made it using commercially mixed taco seasoning for the vegetables, and then added the salsa, sour cream and avocado at the very end. This was really great just how it was, and the lime juice made it taste really fresh and bright.
