There are two recipes for potato salad in The Barefoot Contessa Cookbook – one is for French Potato Salad, and the other is for Provençal Potato Salad. The second version is simply the first version with some added ingredients. Well, anyone who has read more than a few of these posts knows by now that I am not going to add capers or olives to anything, so that only left adding green beans and hard boiled eggs to the French Potato Salad to make Provençal Potato Salad. I killed two potatoes with one stone. Or something.
