Tomatoes Roasted with Pesto

Eh, these weren’t horrible, but they weren’t our favorite use of a fresh tomato, either.  I think this is an example of Ina getting a wee bit lazy in her latest book (How Easy is That?).  Some Contessa devotees are wondering what she’ll have left to teach us in her new book coming out this fall, and if it’s more recycled ideas like this (she also has tomatoes roasted with garlic and herbs, and tomatoes roasted with basil – not so different, really), she may lose some fans.  I guess we’ll have to wait and find out.  In the meantime, save those beautiful late summer tomatoes to eat raw!

  1. Hey, maybe the economy wouldn’t be such a problem if people weren’t so picky about where they got their protein. If grass-fed organic squirrel meat was good enough for my grandparents, then why shouldn’t we all eat the furry rats? Of course, in your native land, they would be ACTUAL rats, but really, what’s a little difference in DNA?
