I took some liberties with these (from Back to Basics), omitting the capers and substituting fresh mozzarella for the blue cheese. Even though I think of them as appetizer material, they could easily be a main course. I added some cherry tomatoes, cut in half. A little bit of parmesan would have been nice, too, to add the flavor lost by omitting the blue cheese and capers. I think that’s maybe what I like most about cooking at home – the complete control over what goes in to or stay out of a recipe. I get to be the fascist dictator of my own dinner, Il Duce of bruschetta, if you will.
