Confetti Corn

We are still getting several bell peppers from our CSA box every week, which is great because they are extraordinarily expensive in the grocery store.  I used frozen corn for this recipe (Back to Basics), and the peppers were a nice addition.  Having them mixed in with such a familiar, kid-friendly vegetable even convinced my 4-year-old to try a few bites of pepper.  The basil was a great addition.

  1. If you wanted to add some chorizo and tomatoes, and then a touch of cheese (feta or goat are big favorites here), this would form the basis for a fantastic summer main course! Yummy!! Hope all is well at your house!
