Roasted Figs with Caramel Sauce

This recipe (from How Easy is That?) was proclaimed by my husband to be “the best dessert that’s probably good for me that I’ve ever tasted.  It’s good for me, right?”  The caramel sauce was a little bit of a pain to make, but totally worth it.  (And it makes a huge batch, so plan to use some on ice cream, or, oh …. yes, bread pudding whenever the recipe calls for a nasty “hard sauce,” use this instead.  Mmmmm.)

  1. When I tried to make this, the hard part was getting the figs out of the Fig Newtons, but that was only because I didn’t have the right tool. A quick trip to Sur La Table produced the Newton Hooter ($125), a cleverly simple device that pops them right out!
