I didn’t have high expectations for this recipe (from Foolproof). Usually, shortbread doesn’t do anything for me. But this shortbread wasn’t dry and bland like a lot of shortbread is, and the raspberry jam and granola were a huge improvement. I used a pumpkin flax granola that we buy at Costco. As a midwesterner, I have a great affinity for bars, and these will make the regular rotation.
