Balsamic Roasted Beet Salad

I edited this recipe (from Foolproof) almost until it was unrecognizable, but the same basic elements were there: roasted beets, marcona almonds, and arugula. I substituted a creamy local feta for the goat cheese, and instead of mustard in the vinaigrette, I used honey and a splash of orange juice to compliment the beets.  A little grilled chicken or salmon would make this a great meal by itself, but as it was, it was light enough to be a first course for something more substantial.
