Green Green Spring Vegetables

These were so incredibly easy, and really tasty. The crispy shallots made them seem fancy, and satisfied my Southern husband while my Northern roots got their fill of crisp, green vegetables. I used the vegetables listed in the recipe, but I didn’t follow the super-picky instructions about removing some after one minute, some after two, etc. I threw in the broccolini and asparagus together, and after a minute, I added the sugar snap peas and the haricots verts. I plunged them all into the cold water together. You can see that they really retained their beautiful bright green color, and the texture and taste were perfect.
