Guess what Ina’s hiding in her crab cakes?
A rainbow of delicious vegetables.
The recipe, along with the recipe for the remoulade sauce on the side, are from the original Barefoot Contessa Cookbook. They are really, really easy to assemble and make, and they’re now on the regular rotation for dinner. How fancy, you’re thinking. Crab cakes at home. Well, Costco sells some lovely crab meat that’s pasteurized and easy to keep on hand. It’s not super-expensive, as far as seafood goes, and you really can’t beat it for a treat.
Cold crab cakes on a salad for lunch the next day aren’t too shabby, either.
